Growing up in the 60's gave my family access to Chicago's "Maxwell Street" markets and exposure to all fresh meats, seafoods, fruits and vegetables. Every dinner was homemade. A trip to the grocery store was unheard of and frowned upon. This set the stage for a passion of non-processed foods and a lifestyle of wholesome meals.

Where we do use ingredients which are not 100% natural, we carefully choose producers known for their quality and minimal processing standards. For overall food safety reasons, some ingredients are unavoidable and used even by the most discerning and holistic artisan food producers.

Christoph's™ Basil Gorgonzola™ – This sausage requires adding a quality crumbled blue cheese. For food safety, producers may have to add preservatives to their product.

Unlike commercial sausages, Christoph's™ uses only 100% Butt Shoulder and Hard Fatback. No scrap, filler or mechanically separated meats are used.
Our pork shoulders are inspected and hand trimmed by professional butchers. These craftsmen remove veins, sinews, tendons, ligaments, fat nodules, blood clots and bone fragments, assuring our products are of the highest quality in flavor and texture.
Our pork comes only from lean, quality hybrid breeds, such as American Yorkshire, Hampshire and Chester White. This pork is then carefully integrated with controlled ratios of Hard Fatback, offering the best attributes of meat to fat ratios for texture and maximum flavor.
Our sausages are encased only in natural hog or sheep casing. We select only the best casings available. Careful attention is paid to their integrity. Our casings are properly rinsed, flushed of all salts and sufficiently soaked for maximum tenderness.
In order to produce the best, pure butt shoulder flavor, Christoph's™ incorporates only Hard Fatback. We do not use inferior rib or belly fats and no salt-pork. This insures the highest craft sausage texture and flavor. For our customers, only the best is used.
There are no artificial ingredients or preservatives added to any of our products. In future recipes, where gourmet/artisan cured products may be incorporated, they will be clearly stated. None of our recipes at this time incorporate artificail preservatives or cured meats. Preservation is achieved through the process of freezing and vacuum packing. Through this process, freshness is maintained for a minimum of six months, with no discernible loss of flavors.
With proper thawing and slow, low heat pan, oven or grill preparation, our sausages taste as good and as fresh as the day they were made. Once you eat and serve our products, you will never again purchase low cost, low quality, commercially prepared sausages.
Yes, our sausages will cost you slightly more - that's because our ingredient costs are higher. But with quality ingredients and careful, small quantity production comes a significantly higher product quality, better tasting food, increased personal health and nutrition.
